Block Bacon and Eggplant Pasta all'Arrabiata

  1. Use about 10 cm of a block of bacon!
  2. Cut into 1 cm wide slices, then cut each slice into 3 pieces!
  3. Heat olive oil in a pan, and saute the sliced garlic and thinly sliced red chili peppers over low heat until fragrant.
  4. Take out of the pan.
  5. Add the cut up bacon, plus the eggplant that's been sliced to 5mm thick, and saute!
  6. Add the canned tomatoes.
  7. Add the ingredients to season!
  8. Add the cooked pasta to the pan and mix well.
  9. Transfer to serving plates and it's done!
  10. Sprinkle Parmesan cheese and Tabasco to taste and enjoy!
