Favorite Fried Salmon Cakes
- 1 (14 3/4 ounce) can salmon
- 1 egg
- 13 cup onion, minced
- 12 cup flour
- 1 12 teaspoons baking powder
- 1 12 cups Crisco shortening
- Drain salmon, reserving juice.
- Mix salmon, egg & onion until sticky.
- Stir in flour.
- Mix baking powder & reserved juice; add to salmon mixture, mixing well.
- Fry in melted shortening until golden brown.
- Drain on layers of paper towels.
