Curried Cream of Pea Soup
- 1 cup frozen peas
- 1 onion, sliced
- 1 stalk celery, sliced
- 1 medium potato, sliced
- 1 garlic clove, peeled
- 1 teaspoon salt
- 2 12 teaspoons curry powder
- 2 cups chicken stock, heated
- 1 cup light cream, heated
- Place the prepared vegetables, garlic, salt, curry powder and one cup of the the stock in a saucepan.
- Bring to a boil.
- Cover and simmer for 15 minutes.
- Transfer to a processor.
- Blend well.
- Return the mixture to a saucepan.
- Reheat.
- Add the remaining stock and cream.
- Reheat.
- Can be served cold with a dollop of whipped cream, chives and parsley.
