Vegan Chocolate-Chocolate Chip Cake (And Gluten-Free!)
- 1 cup applesauce
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- 3/4 cup flour (or gluten-free flour mix. I prefer Bob's Red Mill)
- 1/2 teaspoon xanthan gum (omit if not using GF flour, or if your GF flour mix already has xantham gum included)
- 1/3 cup cocoa
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 dash cinnamon
- 1/2 cup chocolate chips
- Preheat oven to 350 degrees.
- Grease an 8x8in square pan.
- Combine applesauce, brown sugar and vanilla in a small bowl.
- In a separate bowl, combine all dry ingredient (except the chocolate chips).
- Add the applesauce mixture into the dry ingredients and mix until thoroughly combined.
- Add in chocolate chips.
- Pour into prepared pan.
- Bake 25-30 minutes, or until a toothpick comes out clean.
