Mother Himes' Lemon Chiffon Pie Recipe

  1. Beat egg yolks with 1/2 c. sugar and butter, size of walnuts.
  2. Add in lemon juice and grated rind.
  3. Cook over warm water till thick, about 10 min.
  4. Set aside and beat the 3 egg whites.
  5. Add in 1/2 c. sugar and beat.
  6. Mix in lemon crust.
  7. Don't BEAT IT IN!
  8. Put in pie shell and bake 25 min at 275 to 300 degrees.
