Mother Himes' Lemon Chiffon Pie Recipe
- 1 baked pie shell
- 1 c. sugar
- 1 lemon, juice and rind
- 3 Large eggs
- Healthy pinch of salt (about 1/4 tsp.)
- Beat egg yolks with 1/2 c. sugar and butter, size of walnuts.
- Add in lemon juice and grated rind.
- Cook over warm water till thick, about 10 min.
- Set aside and beat the 3 egg whites.
- Add in 1/2 c. sugar and beat.
- Mix in lemon crust.
- Don't BEAT IT IN!
- Put in pie shell and bake 25 min at 275 to 300 degrees.
