Apricot Crumble Recipe
- 500 gm apricots
- 1 Tbsp. brandy
- 2 Tbsp. sugar (caster)
- 1 tsp golden brown syrup
- 1/10 tsp cinnamon, grnd
- 1 tsp lemon juice
- 1/4 c. water
- 1/2 c. flour, self-raising
- 100 gm unsalted butter
- 3 Tbsp. coconut
- 2 Tbsp. brown sugar
- 1 Tbsp. almonds, grnd
- Split apricots in half, throw away stone and place in a buttered pie dish with sugar, treacle, brandy, lemon juice, water, cinnamon.
- *TOPPING:Rub butter into flour till mix is crumbly, add in brown sugar, almonds and coconut.
- Mix to a crumbly consistency.
- Sprinkle mix proportionately over apricots.
- Bake about 1/2 hour in a moderate oven (350F/190C) till lightly browned.
- Cooking time varies with depth of fruit and crumble.
- If desired a lot of crumble, double topping ingredients.
- Other fruits such as plums, rhubarb or possibly apples may be used.
