Chocolate Potato Cake
- 1 cup mashed potatoes
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 8 tablespoons butter or 8 tablespoons margarine, softened
- 4 ounces unsweetened chocolate squares, melted (4-1oz squares)
- 2 cups sugar
- 4 eggs
- 34 cup buttermilk
- 1 teaspoon vanilla
- 1 teaspoon salt
- Place all ingredients, except the chocolate, in a large bowl.
- With an electric mixer on low speed, mix until well blended, occasionally scraping the bowl with a spatula.
- Then beat at medium speed for 4 minutes.
- Add chocolate and blend throughly.
- Butter a 9x13-inch baking pan.
- Pour batter into pan.
- Bake in a preheated 350 oven for 45 minutes, or until a toothpick pushed into the centre comes out clean.
- Or bake in three 9-inch layer pans for 20 minutes, or until thoothpick comes out clean.
- Let stand for 10 minutes; remove from pans and cool on a wire rack.
- Ice as desired.
