Catfish Parmesan
- 3/4 cup dry bread crumbs
- 3 tbsp grated Parmesan cheese
- 2 tbsp fresh parsley (chopped)
- 1/4 tsp paprika
- 1/4 tsp each pepper, dried oregano and basil (1/8 preferred)
- 6 fresh or frozen catfish fillets (4 ounces each)
- 3 egg whites (beaten)
- In a shallow bowl, combine the bread crumbs,Parmesan cheese, parsley and seasonings.
- Dip catfish in egg whites,then in the crumb mixture.
- Arrange in a baking dish with coated nonstick cooking spray (13-in.

- Lightly spray fillets with the nonstick cooking spray.
- Bake (uncovered) at 375 for 20-25 minutes or until the fish starts to flakes with a fork.
