Spinach Beef Stir Fry
- 1 pound Stir Fry Beef (such As Boneless Sirloin Steak), Cut Into Strips
- 2 teaspoons Olive Oil, Divided
- 1 cup Baby Carrots
- 1 whole Green Pepper, Cut Into Strips
- 1 cup Sliced Celery
- 1 cup Sliced Fresh Mushrooms
- 8 ounces, weight Sliced Water Chestnuts, Drained
- 1/4 cups Soy Sauce
- 2 teaspoons Cornstarch
- 1/2 teaspoons Beef Bouillon Granules
- 1/2 cups Water
- 1 dash Cinnamon, Ginger, Salt, Cayenne, And Any Other Desired Seasonings (to Taste)
- 6 cups Fresh Spinach
- Stir fry beef in 1 teaspoon oil until no longer pink.
- Remove beef and keep warm.
- Stir fry carrots in remaining oil for 2 minutes.
- Add the rest of the vegetables and stir fry for 5 minutes or until crisp-tender.
- Mix together soy sauce, cornstarch, beef bouillon, water, and spices.
- Add to vegetables and bring to a boil; cook for 1 minute or until thickened.
- Add the beef back to the skillet along with the spinach.
- Cook until spinach wilts.
- Serve over hot cooked rice.
