Grilled Mahi Mahi Fish Tacos
- 2 whole Mahi Mahi Steaks Cut Lengthwise To 3 Pieces
- 1/2 whole Grapefruit
- 1 teaspoon Olive Oil
- 1 dash Salt
- 1 dash Ground Pepper
- 6 pieces Corn Tortillas
- Taco Fixings Of Choice
- Note: the fish is cooked on a gas grill.
- You can also add your favorite taco fixings: lettuce, shredded cabbage, tomatoes, guacamole, sour cream, cheesethe possibilities are endless!
- Place fish in a small bowl and squeeze grapefruit juice.
- Add olive oil and salt and pepper to taste.
- Cover and put in the fridge to marinate for at least 15 minutes, but no more than 30 minutes.
- After 15-30 minutes, lay aluminum foil on top of the grill so that the fish does not stick on the grill rack.
- Preheat the grill and set on low.
- Once the grill is ready, lay the fish and cook until the fish turns opaque halfway through, about 2-3 minutes.
- With a pair of tongs, turn the fish on the other side and cook for another 2-3 minutes.
- Fish is cooked when it is opaque on all sides and the middle portion.
- Do not overcook.
- Transfer each fish on individual corn tortillas and add your favorite fillings.
