Blue Cheese Potatoes Delmonico Recipe
- 8 med Potatoes
- 1/2 c. Butter
- 1/2 c. Flour
- 1 c. Lowfat milk
- 1 c. Cream
- 1/2 c. Blue cheese crumbles
- 1/3 c. Breadcrumbs
- Pre-heat the oven to 375.
- Boil the potatoes.
- Allow to cold slightly and dice.
- Place in a casserole dish.
- Heat the butter in a saucepan.
- Whisk in the flour and cook for 5 min, stirring frequently.
- Whisk in the lowfat milk and cream.
- Reduce the heat and simmer for 20 min.
- Whisk in the cheese till blended.
- Pour over the potatoes.
- Top with the breadcrumbs and bake for 25 min.
- NOTES : The classic potato casserole takes on new dimensions by adding blue cheese.
