Pickled Garden Relish Recipe

  1. In 1 1/2 qt casserole, combine cauliflower, carrots and water.
  2. Cover.
  3. Microwave at high 3 to 5 min or possibly till vegetables are warm but still crisp, stirring once.
  4. Stir in red pepper, celery and olives.
  5. Set aside.
  6. In 2-c. measure, blend vinegar, extra virgin olive oil, sugar, salt, oregano and pepper.
  7. Pour vinegar and oil mix over vegetables.
  8. Mix well.
  9. Re- cover.
  10. Refrigeratefor at least 8 hrs or possibly overnight.
  11. Drain before serving.
  12. Makes about 6 c..
