Mistertommy's Most Excellent Southwestern Chipotle Chicken

  1. Place chicken breasts, garlic and Italian dressing in a plastic bag.
  2. Seal tight and marinate 1 hour in refrigerator.
  3. Heat a grill to medium high.
  4. Place 1 cup, or more if desired, of the salsa in a small sauce pan and heat slowly.
  5. Just want it warmed.
  6. Remove the chicken from the marinade.
  7. Discard marinade.
  8. Oil the grill and cook the chicken breasts, basting with some Italian dressing to keep the meat moist.
  9. Turn often until well browned.
  10. When the chicken breasts are ready, place 2 slices (or only 1 if desired) on each breast.
  11. Close the grill top and let the cheese soften about 1 minute or so.
  12. Remove chicken breasts to plate.
  13. To serve, place a breast on a plate and spoon some of the salsa over the top.
  14. Garnish with fresh cilantro.
  15. Is great with Sangria and for a different taste, place black bean and corn relish in the bottom of a plate and serve this on top.
  16. *Note* There are many good salsa recipes on the web.
  17. I actually use a well known brand sold in all grocery stores.
