Hummingbird Cake

  1. Note:
  2. Do
  3. not use electric beater.
  4. Mix by hand.
  5. Sift together flour, salt, soda and cinnamon into mixing bowl.
  6. Add sugar
  7. and
  8. stir
  9. to
  10. mix.
  11. Add
  12. oil, vanilla and beaten eggs, mixing well.
  13. Add
  14. nuts,
  15. mashed bananas and pineapple, mixing just until well blended.
  16. Place in greased and floured 10-inch tube pan.
  17. Bake for
  18. 1 hour and 20 minutes in a 350u0b0 preheated oven.
  19. Cake will crack
  20. slightly on top.
  21. May also be baked in 3 nine-inch layer pans
  22. for 25 to 30 minutes or until it tests done. Cool and frost with Cream Cheese Frosting.
