Mini Smoked Cheddar and Granny Smith Apple Sandwiches With Roast
- 1 loaf sourdough bread (use your favorite bakery and shape)
- 1 granny smith apple, sliced in thin 1/4 inch wedges
- 12 lb cheese, Yellow Smoked Cheddar, thinly sliced
- 12 lb cheese, White Oak Smoked Cheddar, thinly sliced
- 12 cup mayonnaise, store bought & high quality
- 1 red onion, large
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 14 cup softened butter
- *Cut ends and peel paper off of onion, wrap in foil and place in 350 degree oven to roast for 30 - 40 minutes.
- Allow to cool.
- *Place onion, mayo, olive oil, salt & pepper in a food processor and blend until completely smooth.
- *Slice bread into the desired shape and size.
- I like to do small 3x3 sandwiches for parties, but you can make them regular full serving size if desired.
- *Spread mayo on each slice of bread.
- Add slices of both cheese types and apple to the bread and make a sandwich.
- *Spread softened butter on outside of sandwich and cook on a grill pan until cheese is melted and outsides are golden brown.
- *Serve hot or at room temperature.
