Two-Alarm Chicken Taco Salad
- - boneless skinless chicken breasts, cut into bite-size pieces
- 3 cups onions, chopped Safeway 3 lb For $2.99 thru 02/09
- 1-1/2 qt. canned chili beans, undrained
- 3 cups salsa
- 3 each medium tomatoes, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 3/4 cup KRAFT Light Thousand Island Reduced Fat Dressing
- 3/4 cup sliced black olives
- 3 each jalapeno peppers, finely chopped
- 2 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 3/4 tsp. salt
- 3/4 tsp. black pepper
- 1-1/2 gal. romaine lettuce, shredded
- 1-1/2 cups shredded reduced-fat Cheddar cheese Target 2 For $5.00 thru 02/06
- 1-1/2 qt. baked tortilla chips, crushed
- Spray large nonstick skillet with cooking spray.
- Add chicken and onions; cook on medium heat until chicken is cooked through (170F), stirring occasionally.
- Add beans, salsa, tomatoes, dressing, olives, jalapeno peppers and seasonings; stir.
- Cook until heated through, stirring occasionally.
- For each serving: Place 1 cup of the lettuce in serving bowl.
- Top with 1/2 cup of the chicken mixture and 2 Tbsp.
