Two-Alarm Chicken Taco Salad

  1. Spray large nonstick skillet with cooking spray.
  2. Add chicken and onions; cook on medium heat until chicken is cooked through (170F), stirring occasionally.
  3. Add beans, salsa, tomatoes, dressing, olives, jalapeno peppers and seasonings; stir.
  4. Cook until heated through, stirring occasionally.
  5. For each serving: Place 1 cup of the lettuce in serving bowl.
  6. Top with 1/2 cup of the chicken mixture and 2 Tbsp.
  7. each of the cheese and crushed chips.
