Lone Star Caviar
- 1 whole Large Tomato, Seeded And Chopped
- 1 bunch Green Onions, Sliced
- 1/2 whole Jalapeno, Seeded And Minced
- 18 cups Cilantro, Chopped
- 1 clove Garlic, Minced
- 2 Tablespoons Chopped Green Chiles (from A Can)
- 1 can (15 Oz.) Black-eyed Peas, Rinsed And Drained
- 2 Tablespoons White Wine Vinegar
- 1 Tablespoon Extra Virgin Olive Oil
- 1/4 teaspoons Coarse Salt
- 18 teaspoons Pepper
- 1/4 teaspoons Cumin
- Mix all ingredients in a large bowl.
- Cover and refrigerate for at least one hour to allow the flavors to marry.
- Serve with tortilla chips.
