Tomato and Grilled Bread Salad

  1. Heat a grill to medium.
  2. Brush the bread slices on both sides with the 2 tablespoons oil.
  3. Grill until lightly charred on both sides, 3 to 4 minutes.
  4. Let the bread cool slightly, then cut into large cubes.
  5. In a large bowl, toss the bread cubes with the diced tomatoes, cucumber, and basil.
  6. Drizzle with the vinegar and the remaining 1/4 cup oil, and season with salt and pepper.
  7. Toss to combine, and serve.
