Diabetic Yellow Eye Baked Beans Recipe
- 1 pound dry yellow eye beans
- 1/4 pound salt pork
- 1/4 c. molasses
- 1 teaspoon dry mustard
- 1/4 teaspoon pepper
- 3/4 tbsp. salt
- 1/2 med. onion
- Soak beans overnight in cool water.
- In the morning parboil beans till skins cracked when blown upon.
- Cut onion in quarters and place in bottom of bean pot.
- Add in parboil beans.
- Cut rind of the salt pork to the depth of 1/2 inch and place on top of beans.
- Mix sugar, molasses, mustard, pepper, salt, with 1/2 pint of boiling water.
- Pour over pork and beans.
- Add in water as necessary to cover.
- Bake at 300 degrees for 6 hrs or possibly more, adding water as beans cook.
