Tomato Toast

  1. Spread the mayonnaise on the bread.
  2. Pour the ponzu in a small bowl, dip each piece of cut tomato, then lay on the bread.
  3. Mix the grated cheese with the remaining ponzu, which should have some tomato juice, and mix.
  4. Spread on the tomato, especially around the edges.
  5. Toast the bread.
  6. If you use cherry tomatoes, a lot of juice might come out, but it will be fine.
  7. Just pour it all on the toast.
  8. If using halved tomatoes, lay on the bread cut side up.
  9. If you don't have grated cheese, make a mock version with sliced cheese
  10. If the tomatoes are too sweet, sprinkle with a bit of salt while eating.
  11. Savor that sweetness with each mouthful.
  12. A version with shiitake mushrooms.
