Smashed Parsnips with Mascarpone Cheese

  1. Bring a large pot of water to a boil and add the parsnips.
  2. Cook until the parsnips are tender, about 10 minutes.
  3. Drain.
  4. Heat a pot over medium-high heat and add the butter and sugar.
  5. Allow to melt together.
  6. Add onions and saute until caramelized, 6 minutes.
  7. Add parsnips to pot.
  8. Turn heat off and add the mascarpone.
  9. Stir together and mash, adding parsley, salt and pepper.
