Potato Apple Pancakes Recipe

• 3 c. grated, pared raw potatoes
• 1/2 c. grated pared apples
• 1/2 c. minced onion
• 3 Large eggs
• 1/2 c. flour
• 1/8 teaspoon grnd mace
• 3/4 teaspoon salt
• 1/2 teaspoon pepper
• Vegetable oil
• Grnd nutmeg

1. Rinse potatoes in cool water, drain.
2. Mix potatoes, apples, onion, Large eggs, flour, mace, salt and pepper.
3. Heat 2 tbsp.
4. oil in large skillet till warm.
5. Fry potato mix using 1/3 c. for each pancake, adding oil as necessary.
6. Sprinkle with nutmeg.
