Chewy Ginger Cookies
- 3/4 cup shortening
- 1-1/4 cup sugar, divided
- 1 egg
- 1/4 cup molasses
- 1 tsp. vanilla extract
- 2 cups all-purpose flour
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cloves
- In a mixing bowl, cream shortening and 1 cup sugar.
- Add the egg, molasses and vanilla; mix well.
- Combine dry ingredients; add to creamed mixture and mix well.
- Roll into 1-inch balls; roll in remaining sugar.
- Place 1-1/2-inches apart on ungreased baking sheets.
- Bake at 375F for 10 minutes or until lightly browned.
- Cool on wire racks.
- Store in an airtight container.
