Chewy Ginger Cookies

  1. In a mixing bowl, cream shortening and 1 cup sugar.
  2. Add the egg, molasses and vanilla; mix well.
  3. Combine dry ingredients; add to creamed mixture and mix well.
  4. Roll into 1-inch balls; roll in remaining sugar.
  5. Place 1-1/2-inches apart on ungreased baking sheets.
  6. Bake at 375F for 10 minutes or until lightly browned.
  7. Cool on wire racks.
  8. Store in an airtight container.
