Sausage & Spinach Soup
- 10 ounces sweet Italian sausage
- 1 cup chopped onion
- 2 teaspoons minced garlic
- 12 cup water
- 1 (15 ounce) can soybeans
- 1 (14 1/2 ounce) candiced petite tomatoes
- 3 (42 ounce) cans chicken broth
- 2 cups chopped Baby Spinach
- 1 tablespoon chopped fresh basil
- 2 teaspoons chopped fresh oregano
- 2 tablespoons grated romano cheese
- Remove casings from sausage.
- Cook it in a large sauce pan until browned, stirring to crumble.
- add the onion and garlic, cook for 2 minutes.
- Stir in water, beans, tomatoes, broth.
- Cover and bring to a boil.
- Remove from heat, stir in spinach, basil and oregano.
- Sprinkle each serving with grated Romano cheese.
