Honey and Molasses Roasted Chicken

  1. Set oven to 400 F and while it is heating allow butter to melt in a 9x13 pan that youve placed in the oven.
  2. Clean and cut potatoes and carrots into large chunks.
  3. Remove pan from oven when the butter is melted and add potatoes, carrots, oregano, garlic, basil, onion powder and salt.
  4. Toss to mix seasoning and thoroughly cover vegetables.
  5. Place chicken pieces on top of veggies and then sprinkle with Cajun seasoning.
  6. If you dont have this seasoning you can use salt and pepper.
  7. Place in the oven and bake for 40 minutes.
  8. Then remove the dish from the oven.
  9. Combine honey and molasses and brush on the chicken.
  10. Return dish to the oven and bake for 15 minutes.
  11. At this point if the chicken is finished cooking remove it from the pan and store covered to keep warm.
  12. The vegetables may need to be cooked by themselves until soft.
  13. In my case that was another 15 minutes.
  14. Serve.
