Wheat Germ Banana Muffins
- 1 14 cups whole wheat pastry flour
- 34 cup wheat germ
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 12 teaspoon baking soda
- 12 teaspoon salt
- 13 cup sugar
- 1 cup vanilla soy yogurt
- 13 cup vegetable oil
- 1 tablespoon lemon juice
- 1 cup mashed ripe banana
- In large bowl, combine dry ingredients.
- In medium bowl, combine wet ingredients.
- Add the yogurt mixture to the flour mixture and stir until just blended.
- Divide batter into muffin cups.
- Bake at 400 for 20-25 minutes.
