Butterfield Stage Line Chili Recipe
- BUTTERFIELD STAGELINE CHILI
- 4 med Onions, chopped
- 1/4 c. Oil
- 2 lb Grnd pork
- 1 can (15z) tomato sauce
- 1 Tbsp. Cumin
- 1 tsp Oregano
- 1 ounce Tequila
- 10 lb Beef brisket, finely minced
- 1 1/2 x Cloves garlic, chopped
- 7 ounce Can whole green chiles, chopped
- 1 lb Whole tomatoes, finely minced
- 1 tsp Salt
- 1 Tbsp. Dry mustard
- 1 can Beer (3oz) chili pwdr
- Brown onions, and beef in oil.
- Stir in garlic, pork, chiles, cumin, oregano, salt, dry mustard, tomato sauce, tomatoes, tequila, beer, chili pwdr and bouillon cubes.
- Bring to boil, then reduce heat and simmer 2-3 hrs.
- Stir occasionally.
- Don't stir the last 30 minutes before serving.
- Serves 25
