Sophie's multi seed bread

  1. Mix your dry ingredients together, and then add about 2/3rds of the water.
  2. Combine your ingredients, adding more water until you have a slightly sticky dough.
  3. Place onto a floured surface and knead for 10 minutes.
  4. Transfer back into your mixing bowl and cover with some cling film.
  5. Leave for 1 hour.
  6. Preheat the oven to 180 C.
  7. Knock back your dough by gently punching it ave then folding the dough a few times.
  8. Leave to prove again back in the bowl and covered in cling film for another half an hour.
  9. Bake for half an hour.
  10. Remove from the oven and turn out onto a wire cooling rack.
  11. Serve and enjoy - great with salmon and cream cheese!
