Summer Zucchini Bake

• 2 small green zucchini, thinly sliced
• 1 small yellow zucchini, thinly sliced
• 4 eggs
• 1/2 cup Miracle Whip Original Spread Family Dollar $3.50 thru 02/07
• 1/3 cup Kraft 100% Parmesan Grated Cheese
• 1 cup Cracker Barrel Shredded 4 Cheese Italiano Cheese
• 1 small onion, chopped
• 1/2 cup chopped green peppers
• 1/4 tsp. each salt and black pepper

1. Heat oven to 375F.
2. Heat large skillet sprayed with cooking spray on medium heat.
3. Add green and yellow zucchini; cook and stir 5 min.
4. or until crisp-tender.
5. Beat eggs and Miracle Whip in large bowl with whisk until well blended.
6. Stir in Parmesan.
7. Add zucchini mixture and all remaining ingredients; mix lightly.
8. Spoon into 8-inch square baking dish.
9. Bake 35 to 40 min.
10. or until centre is set and edges are lightly browned.
