Chilly Night Stew
- 1 (15 ounce) can black beans, mostly drained
- 1 (15 ounce) can crushed tomatoes
- 12 lb lean ground beef
- 2 carrots, peeled and roughly chopped
- 1 bouillon cube
- 12 cup frozen corn
- 1 teaspoon soy sauce
- 1 teaspoon cumin
- 1 teaspoon coriander
- 12-1 cup cooked brown rice
- Brown ground beef in a medium size pot and drain.
- Add remaining ingredients and let simmer until the carrots are tender, about 20-25 minutes.
