Smoke Flavored Roast Chicken
- 3 lbs whole chickens
- 13 cup soy sauce
- 2 tablespoons sherry wine
- 12 teaspoon liquid smoke
- 12 teaspoon ginger juice
- 1 teaspoon salt
- 1 tablespoon hoisin sauce
- Mix soy sauce, sherry, smoke flavoring, ginger juice, Hoisin sauce and salt.
- Place chicken and mixture in a plastic bag.
- Tie opening at end of bag (I used ziploc).
- Shake to spread sauce evenly over chicken.
- Keep chicken in plastic bag 4 hours (refrigerated).
- Turn bag 2 or 3 times.
- ( I put the bag in a pan in case of leakage).
- Pre-heat oven to 350*.
- Bake chicken for 1 1/2 hours.
- Cool chicken 30 minutes.
- Cut into bite-sized pieces.
- Serve cold.
