Split Pea Soup With Glucomannan
- 1 lb dried split green peas
- 1 teaspoon celery seed
- 2 garlic cloves, minced
- 1 large yellow onion, chopped
- 1 cup baby carrots, chopped
- 1/2 cup fresh parsley, chopped
- 1 teaspoon thyme
- 2 bay leaves
- 2 teaspoons sea salt
- 1/4 teaspoon pepper, to taste
- 1 tablespoon extra virgin olive oil
- 32 ounces vegetable stock or 32 ounces chicken stock
- 12 g glucomannan, opt'l, reduce water if not (fiber powder)
- 2 cups water
- In a large bowl, soak peas for 4 hours in enough water, covering peas by 2". Drain and rinse.
- In a slow cooker, combine peas, celery seed, garlic, onion, carrots, parsley, thyme, bay leaves, salt, pepper, & oil. Add the stock.
- In a medium bowl, combine glucomannan and water. Stir to thicken. Add to slow cooker. Mix.
- Cook on low for 8-9 hours or on high for 4-5 hrs., until peas are soft.
