Sticky Toffee Pudding

  1. In a saute pan on medium, melt the butter then stir in the sugar.
  2. Simmer, stirring occasionally until it begins to turn golden brown and caramelized.
  3. Add brandy and lemon juice to the pan and simmer to incorporate.
  4. Add pear slices and cook slowly to tenderize and caramelize.
  5. Yield: 9 portions
  6. Wash fruit and slice very thin on an electric meat slicker.
  7. Dip slices in simple syrup then lay on a parchment lined sheet pan.
  8. Place in a 200 degree convection oven for 40-60 minutes, until dried out.
  9. While still hot, peel slices off paper.
  10. Cool completely on a wire rack.
  11. Store in an airtight container.
  12. Yield: 8 servings
