Garlic and herb potatoes
- 5 lb red skin potatoes
- 1 cup olive oil
- 1 salt to taste
- 2 envelope lipton garlic and herb soup mix
- Preheat oven to 400
- Cut up the potatoes in small chunks like you would for potato salad
- Mix garlic and herb soup with the olive oil pour over potatoes in either a zip lock bag or a covered bowl.
- Make sure all potatoes are covered by the mix
- I use a 16x12x1 inch Pan lined with foil.
- Place potatoes in pan and even them out.
- Cover with foil and place in oven for 20 minutes.
- After 20 minutes uncover, mix potatoes around and cook for another 30 minutes.
- If you need them more crisp then use the broil for about 3 minutes
- You can half this recipe if you don't have a large family like I have.
- 3 teenagers me and my boyfriend.
- We love this any time we grill out out
- This can also be used to marinade chicken for the grill.
- Just let marinate over night.
- It's delicious!
