Asian Steam Mussels
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 2 tbsp water
- 1 1/2 tbsp olive oil, extra virgin
- 3 clove garlic, thinly sliced
- 1 medium onion, thinly sliced
- 1 medium carrot, chopped
- 1 small hot pepper, thinly sliced
- 1 cup scallion, cut into 1 1/2 inch length
- 4 slice turkey bacon, sliced
- 2 lb fresh mussels
- 1 tbsp sesame oil
- 2 tbsp cooking wine
- 1 tsp sugar
- soak fresh mussels in cold water for 30 min.
- Rinse a few times to ensure shells are clean.
- Drain the water, set aside mussels
- Heat olive oil in a large deep pot
- Add all of the vegetables and bacon (fixin) to the pot, stir fry for 2 minutes
- Add in sauce ingredients and cook for 1 minute
- Add in mussels and rest of the ingredients and cook with lid on until all of the mussels open, about 3 minutes
- Serve!
