One Pot Quinoa Pilaf

  1. Melt oil in large dutch oven or pot.
  2. Add onions, carrots, cabbage and cook on high heat for 10-12 minutes.
  3. Add garlic the last 5 minutes of frying time.
  4. Add broth, quinoa, spices, salt and pepper.
  5. Cover a cook for 15-20 or until quinoa has absorbed broth.
  6. Stir in peas, diced chicken and Parmesan.
  7. Add more salt if needed.
  8. Serve with sriracha if you like it spicy!
