Quick Miso Chicken

  1. Place chicken breasts between 2 sheets of plastic wrap or wax paper, and pound thin with a mallet.
  2. In a small bowl, whisk together miso and orange marmalade.
  3. Sprinkle chicken breasts lightly with salt and pepper and brush all over with marinade.
  4. Let stand 30 minutes.
  5. Warm a nonstick saute pan with the oil over medium-high heat.
  6. When hot, add the chicken.
  7. Cook on first side 3 minutes.
  8. Flip.
  9. Baste tops with any remaining marinade.
  10. Cook on second side 3 minutes or until meat is no longer pink.
  11. Flip, cook 15 seconds, and transfer to plates.
