Barbecue Chicken Quesadillas
- 8 Tablespoons Butter, Softened
- 4 whole Large-sized Whole Wheat (or White) Wraps
- 2 Tablespoons Mayonnaise
- 3 cups Shredded (or Diced) Cooked Chicken
- 2 Tablespoons Barbecue Sauce
- 2 cups Shredded Cheddar Cheese
- Get all of the ingredients assembled and close to your stove.
- Youll want to have them handy in order to work quickly.
- Heat 2 tablespoons of butter over medium-high heat in a cast-iron skillet, turning to coat the entire bottom of the skillet.
- When the butter just begins to turn brown, put in one of the wraps, and top with a layer of mayonnaise (about 1 tablespoon).
- Quickly add a layer of chicken (1 1/2 cups), and drizzle on some BBQ sauce (a tablespoon or more or to taste).
- Sprinkle on half of the cheese, evenly over the top, and cover with another wrap.
- Spread 2 tablespoons of butter over the top wrap.
- Cook a minute or so more, until the bottom is golden-brown, then carefully flip the sandwich over and cook on the other side until golden-brown.
- This will take a couple of minutes.
- Remove the sandwich to a cutting board, and repeat the process with the remaining ingredients.
- Allow the sandwiches to cool slightly in order to allow the cheese to set a bit.
- Cut each sandwich into fourths and enjoy!
