Barbecue Chicken Quesadillas

  1. Get all of the ingredients assembled and close to your stove.
  2. Youll want to have them handy in order to work quickly.
  3. Heat 2 tablespoons of butter over medium-high heat in a cast-iron skillet, turning to coat the entire bottom of the skillet.
  4. When the butter just begins to turn brown, put in one of the wraps, and top with a layer of mayonnaise (about 1 tablespoon).
  5. Quickly add a layer of chicken (1 1/2 cups), and drizzle on some BBQ sauce (a tablespoon or more or to taste).
  6. Sprinkle on half of the cheese, evenly over the top, and cover with another wrap.
  7. Spread 2 tablespoons of butter over the top wrap.
  8. Cook a minute or so more, until the bottom is golden-brown, then carefully flip the sandwich over and cook on the other side until golden-brown.
  9. This will take a couple of minutes.
  10. Remove the sandwich to a cutting board, and repeat the process with the remaining ingredients.
  11. Allow the sandwiches to cool slightly in order to allow the cheese to set a bit.
  12. Cut each sandwich into fourths and enjoy!
