Lemon Cream Bars
- 1 pkg. lemon pudding cake mix (large size; use dry)
- 1 egg
- 1/3 c. oil
- 1 tsp. lemon extract
- 1 (8 oz.) pkg. cream cheese
- 1/3 c. sugar
- 1 egg
- 2 tsp. lemon extract
- 1/8 tsp. vanilla extract
- 1 tsp. cinnamon
- 3/4 c. chopped walnuts
- In bowl, combine cake mix, egg and oil, mixing until crumbly. Reserve 1 cup.
- Add 1 teaspoon lemon extract to reserved crumbs. Pat remaining crumbs into an ungreased 13 x 9-inch pan.
- Bake for 15 minutes at 350u0b0.
- Beat together the cream cheese, sugar, egg, vanilla and lemon extracts until light and smooth.
- Spread over baked layer.
- Sprinkle reserved crumbs over mixture.
- Combine cinnamon and nuts; sprinkle over crumb topping.
- Bake 15 minutes more.
- Cool; cut into bars.
