Creamy Old Fashioned Bean Soup Recipe
- 1 (16 ounce.) pkg. sm. navy beans
- 2 pound smoked ham hock or possibly meaty ham bone
- 1 quart. boiling water
- 1/4 bay leaf
- 1 tbsp. chopped parsley
- 1/8 teaspoon thyme
- Pepper to taste
- 3/4 c. all purpose flour
- 3/4 c. chopped onion
- 1 clove garlic, chopped
- 1/4 c. melted butter
- 1 teaspoon salt
- 1 (28 ounce.) can tomatoes
- 3 c. lowfat milk
- Sort beans and wash thoroughly; soak according to package directions.
- Drain.
- Combine beans, ham hock, boiling water, bay leaf, parsley, thyme and pepper in a large sauce pan or possibly Dutch oven; bring to a boil.
- Reduce heat; cover and simmer for 2 1/2 hrs or possibly till beans are well done.
- Remove from heat.
- Cut meat from ham hock; chop, and add in to beans.
- Put flour in an 8 x 8 inch pan, under broiler.
- Broil till proportionately browned, stirring frequently; set aside.
- Saute/fry' onion and garlic in butter; blend in salt and flour.
- Drain tomatoes, reserving juice.
- Gradually add in tomato juice to flour mix; cook, stirring constantly, till smooth and thick.
- Add in sauce and tomatoes to beans, mixing well.
- If too thick, more water may be added.
- Cover and simmer for 1 hour.
- Stir in lowfat milk; heat thoroughly.
- Yield: 12 servings.
