Creamy Old Fashioned Bean Soup Recipe

  1. Sort beans and wash thoroughly; soak according to package directions.
  2. Drain.
  3. Combine beans, ham hock, boiling water, bay leaf, parsley, thyme and pepper in a large sauce pan or possibly Dutch oven; bring to a boil.
  4. Reduce heat; cover and simmer for 2 1/2 hrs or possibly till beans are well done.
  5. Remove from heat.
  6. Cut meat from ham hock; chop, and add in to beans.
  7. Put flour in an 8 x 8 inch pan, under broiler.
  8. Broil till proportionately browned, stirring frequently; set aside.
  9. Saute/fry' onion and garlic in butter; blend in salt and flour.
  10. Drain tomatoes, reserving juice.
  11. Gradually add in tomato juice to flour mix; cook, stirring constantly, till smooth and thick.
  12. Add in sauce and tomatoes to beans, mixing well.
  13. If too thick, more water may be added.
  14. Cover and simmer for 1 hour.
  15. Stir in lowfat milk; heat thoroughly.
  16. Yield: 12 servings.
