Favorite Baked Cod

  1. Preheat oven to 400F (200C).
  2. Spray shallow baking dish with vegetable cooking spray.
  3. Sprinkle bottom of sprayed dish with the lemon juice or water.
  4. Place fish fillets in dish; set aside.
  5. In a medium bowl, combine the remaining ingredients except the stewed tomatoes.
  6. Spread mixture over the fillets.
  7. Top evenly with the chopped stewed tomatoes.
  8. Bake for 25 to 30 minutes, or until fish is opaque and flaky, but not dried out.
  9. Serve with lemon wedges, if desired.
