Light Tropical Island Muffins
- 2 cups whole wheat pastry flour
- 13 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 34 teaspoon nutmeg
- 1 egg white
- 34 cup mango pulp
- 1 cup skim milk
- 1 cup apple, chopped
- 1 teaspoon lime juice
- Preheat oven to 400F; spray mini-muffin tin with non-stick spray.
- Sift together flour, salt, baking powder, cinnamon, nutmeg and brown sugar.
- Peel, core and chop apple.
- Mix liquid ingredients together and add to dry ingredients.
- Mix until well blended.
- Do not beat.
- Drop batter by rounded teaspoonfuls into mini-muffin tin.
- Fill about 2/3 full.
- Back for about 13 minutes until light golden brown.
- Turn out onto parchment paper over wire rack to cool.
- Store in air-tight container and/or store in freezer and take out when needed as a snack!
- Note: This muffin is not too sweet and has a mild fruity flavor.
- Not overly spicy -- just enough.
