Diva Diabetic's Seared Tuna Salad
- 2 large tuna steaks
- 2 tablespoons herbes de provence
- 2 tablespoons olive oil
- 1 package of pre-washed salad greens
- 3 roasted red peppers, thinly sliced
- 6 sun-dried tomatoes, roughly chopped
- 2 tablespoons chopped flat-leaf Italian parsley
- 2 chopped scallions, for garnish
- 2 lemons
- 3 tablespoons olive oil
- salt and pepper
- Sprinkle both sides of each tuna slice with salt, pepper and Herbs de Provence.
- Grill or sear the slices on both sides- 3-4 minutes per each side.
- Be careful not to overcook- you want the steaks to be pink in the center and browned on each side.
- Remove the stands and let rest for 5 minutes.
- In a large bowl, place the salad greens, sundried tomatoes, roasted peppers and parsley.
- In a small bowl, grate the rinds of both lemons, slice them in half and squeeze the juice.
- Add oil, salt, pepper.
- Whisk to blend completely.
- Pour half of the dressing over the salad and toss to coat completely.
- Thinly slice the steaks on an angle, and arrange on top of the salad; drizzle the rest of the dressing over the tuna.
- Sprinkle with chopped scallions and serve up!
