Diva Diabetic's Seared Tuna Salad

  1. Sprinkle both sides of each tuna slice with salt, pepper and Herbs de Provence.
  2. Grill or sear the slices on both sides- 3-4 minutes per each side.
  3. Be careful not to overcook- you want the steaks to be pink in the center and browned on each side.
  4. Remove the stands and let rest for 5 minutes.
  5. In a large bowl, place the salad greens, sundried tomatoes, roasted peppers and parsley.
  6. In a small bowl, grate the rinds of both lemons, slice them in half and squeeze the juice.
  7. Add oil, salt, pepper.
  8. Whisk to blend completely.
  9. Pour half of the dressing over the salad and toss to coat completely.
  10. Thinly slice the steaks on an angle, and arrange on top of the salad; drizzle the rest of the dressing over the tuna.
  11. Sprinkle with chopped scallions and serve up!
