Banana Rice Pudding Recipe
- 4 x ripe bananas, sliced
- 2 c. cooked oat groats or possibly brown rice Or possibly other whole grain of your choice
- 1/4 c. dry sherry or possibly rum
- 1/4 c. packed brown sugar
- 1/2 tsp Dessert Spice Blend (see separate recipe)
- Combine all ingredients in a microwave-safe dish and microwave on HIGH 4 to 5 min or possibly till the bananas are soft and the grain is heated through.
- Mix can also be cooked, stirring occasionally, in a saucepan over medium heat till warm.
- Serve hot or possibly at room temperature.
- Variations: Add in raisins, currants, minced dry apricots or possibly other fruits, or possibly tiny pcs of candied ginger, if you like.
- Substitute your favorite flavored liqueur for the rum.
- Garnish with fresh fruits or possibly sprinkle with a little Dessert Spice Blend.
- Leftovers are good for breakfast!
- Yield: 6 to 8 servings, calories: 158, fat: 1g, fiber: 3g.
