Christmas Mixed Glace Fruit Loaf
- 3 34 cups butter, plus
- 1 tablespoon butter
- 12 cup caster sugar
- 3 eggs
- 34 cup finely chopped glace pineapple
- 1 12 cups glace cherries
- 12 cup apricot, finely chopped
- 1 12 cups plain flour
- 12 cup self raising flour
- 12 cup milk
- 1 tablespoon sweet sherry
- Grease a loaf pan, line base and sides with parchment paper, then grease paper.
- Cream butter and sugar in a small bowl with electric mixer only until combined.
- Add eggs quickly, one at a time.
- Beat until combined.
- Transfer mixture into a large bowl.
- Stir in fruit, the half of the sifted flours with the combined milk and Sherry.
- Stir in remaining flour and milk mixture.
- Spread mixture into prepared pan.
- Bake in moderately slow oven for about 2 hours.
- Cover with foil, cool in pan.
