Guacamame
- 1 cup Fresh Or Frozen Shelled Edamame. Thawed If Frozen.
- 4 whole Avocado
- 1/2 whole Red Onion, Finely Minced
- 1 whole Jalapeno, Seeded And Finely Minced
- 1 whole Tomato, Seeded And Chopped Fine
- 2 whole Limes, Juiced
- Salt To Taste
- In the bowl of a food processor place the edamame and process until nearly smooth.
- Peel and dice the avocado and place in a mixing bowl.
- Add the minced onion, jalapeno, tomato and mash with the tines of a fork until you acheive a fairly smooth paste; you do want a few lumps here and there of avocado.
- Fold in the edamame.
- Add the lime juice and then season to taste with salt.
- Cooks note: If you dont want too much spice then only use half a jalapeno and make certain to remove the seeds and ribs.
- Wear gloves if you are not used to handling chilies.
- If youre not a fan of lime, then only use 1 lime.
