Guacamame

  1. In the bowl of a food processor place the edamame and process until nearly smooth.
  2. Peel and dice the avocado and place in a mixing bowl.
  3. Add the minced onion, jalapeno, tomato and mash with the tines of a fork until you acheive a fairly smooth paste; you do want a few lumps here and there of avocado.
  4. Fold in the edamame.
  5. Add the lime juice and then season to taste with salt.
  6. Cooks note: If you dont want too much spice then only use half a jalapeno and make certain to remove the seeds and ribs.
  7. Wear gloves if you are not used to handling chilies.
  8. If youre not a fan of lime, then only use 1 lime.
