Apple Cinnamon Oatmeal Quinoa Bites
- 1 cup Quick Cooking Oats
- 1 cup Cooked Quinoa
- 1 Tablespoon Cinnamon
- 1/2 teaspoons Nutmeg
- 1/2 teaspoons Salt
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Flax Seed Meal
- 2 Tablespoons Honey
- 2 Tablespoons Unsweetened Applesauce
- 1/2 cups Almond Milk
- 2 Eggs, Lightly Beaten
- 2 teaspoons Vanilla
- 1 cup Apple, Chopped
- 13 cups Sliced Almonds
- Preheat oven to 350 F and generously spray a 36-count mini muffin tin with non stick cooking spray.
- Recipe makes roughly 32 muffins.
- In a large bowl combine oats and cooked quinoa.
- Set aside.
- In a small bowl stir together the cinnamon, nutmeg, salt, brown sugar, and flax seed meal.
- Add this into the oat mixture.
- Next add your honey, applesauce, almond milk, eggs and vanilla.
- Stir until combined.
- Finally stir in your chopped apple and sliced almonds.
- Use a small tablespoon sized scoop to fill muffin tin.
- Bake for 12-15 minutes or until golden and set.
- Remove from oven and allow muffins to cool.
- Store in an airtight container.
- *Note: Quinoa cooks quickly and easily in a rice cooker following the same rules as cooking rice!
