Low Carb Veggie Beef Soup
- 1 12 lbs lean ground beef
- 1 (8 ounce) bag frozen chopped onions
- 1 (28 ounce) can diced tomatoes (drained)
- 1 (28 ounce) can cut green beans (drained)
- 1 cup mild salsa
- 8 ounces fresh mushrooms (sliced)
- 4 celery ribs (chopped)
- 12 head cabbage (chopped)
- 3.5 (14 ounce) cans beef broth
- salt and pepper
- garlic powder
- all purpose Greek seasoning
- Brown meat with onions in skillet.
- Sprinkle meat with garlic powder.
- Put all other ingredients in a large crock pot except salt and pepper.
- Once meat has browned, add meat to crock pot and stir well.
- Add salt and pepper to taste.
- Turn crock pot on high.
- I let mine cook on high for about 5-6 hours.
- I add shredded cedar cheese to mine when serving.
