Pan fried squid, baby gem and piquillo peppers recipe

  1. Start by cleaning the squid if your fishmonger hasnt already done it for you.
  2. Once you have just the tubes and tentacles, open the tube by cutting down one side with a knife.
  3. Score all of the flesh in cross sections and then cut in rectangular pieces.
  4. Prepare the picada of garlic and flat parsley by chopping it as thin as you can and mixing it with a couple of spoons of a good Spanish olive oil.
  5. Put to one side.
  6. Place a wide pan over a high heat and drizzle with some Spanish olive oil.
  7. Season the squid and pan fry for a couple of minutes.
  8. Set aside and in the same pan with a bit more oil pan fry the baby gem lettuce leaves for a few seconds.
