Sambo Cookies Recipe
- 1 pound cut up dates
- 3/4 c. sugar
- 1/2 c. butter
- 1 egg
- 1 tbsp. lowfat milk
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 3 1/2 c. Rice Krispies
- 1/2 c. Spanish
- 1 can coconut
- Combine dates, sugar and butter in pan; cook 5 min over low heat.
- Cold some.
- Add in egg, lowfat milk, vanilla and salt; mix, heat through.
- Cold some.
- Pour into mixing bowl.
- Add in remaining ingredients; mix well.
- Cold in refrigerator.
- Roll into balls, then roll in coconut.
- Store on waxed paper in covered container.
